Candy Oreo Pops

Melt your white chocolate in the microwave on 30 seconds intervals, stirring in between each until all white chocolate is fully melted (be careful not to overheat). Separate into 3 bowls/containers, and color with oil based food coloring gels (blue, pink, orange). Fill separate small piping or ziplock bags with each color.

Pipe the swirl of blue chocolate inside of the lollipop mold, then pipe the pink and orange chocolate swirls (make sure that only the base of the mold's cavity is covered). Place the mold into the freezer for 5 minutes until chocolate sets. Remove the mold from the freezer and add any desired color of the chocolate to the sides of the mold, smoothing with food safe brush or spoon (make sure to leave some room in the mold for the oreo cookie). Insert the oreos and lollipop sticks into each cavity of the mold. Place the filled mold into the freezer again for 5-10 minutes.

Meanwhile, cut the stroop waffles into 4 triangles. Decorate with piped melted chocolate and coarse or sparkling sugar if desired. Set aside to set.

Remove the lollipop mold from freezer and pop out the oreos. Pipe bit of leftover melted chocolate to the sides of the oreo "candy" or onto the pointy ends of the stroop waffle triangles and adhere to the sides of oreo pops. Allow to set at room temperature or freeze for 5 minutes before gifting or serving 🍬🍭
