A delightful and creative recipe for edible cookie jewelry boxes, featuring colorful dough and white chocolate 'glue' for assembly. Perfect for gifts or a fun baking project.
1. Add flour, cornstarch, salt, and powdered sugar into the bowl of stand mixer fitted with the paddle attachment. Mix on low speed just until all combined.
2. Add cubed soft butter while the mixer is still going on low speed; mix until the ingredients resemble cornmeal.
3. Add the egg and vanilla; mix until dough is cohesive and starts forming a ball.
4. Transfer the dough onto the kitchen plastic, form flat disc, wrap and refrigerate for 30 minutes.
6. Once the dough has chilled, take it out of the fridge and let sit at room temperature for 5-10 minutes.
7. Divide the dough in half, then divide one of halves into four pieces, and color each with red, purple, burgundy, and pink food coloring gels. Roll each dough in between two parchments to prevent sticking (and avoid adding more flour), then place it into the freezer for 5-10 minutes until it hardens.
8. Remove the dough sheets from the freezer, transfer onto perforated or silicone baking mesh mats, if desired (or leave on parchment for baking). Cut out the hearts using small cookie cutter, fit the heart cutouts in the different colored doughs heart openings (reserve some hearts for making the lids) . Using a square cookie cutter, cut the squares from all of the dough sheets and freeze the square cookies for 10-15 minutes.
9. Preheat oven to 350 F.
10. Bake on middle rack for 10-12 minutes until cookie edges are set. Cool to room temperature before assembling.
11. Using the melted white chocolate as a "glue", adhere the 4 sides to the base square cookie. Let set until chocolate hardens.
12. Meanwhile, adhere some reserved heart cookies to the "lids" using bit of melted white chocolate. Fill the set cookie boxes with favorite candy, chocolates, or mini cookies. Enjoy!πͺππ
