Also known as "elephant ears", "shoes soles", "palm tress", "palm leaves", and "ушки" ("ushki" in eastern europe). This recipe makes delicious and easy-to-make heart-shaped cookies using puff pastry.
Preheat oven to 400°F. Set parchment paper over your baking sheet/pan and set aside. Sprinkle 1/4 cup of granulated sugar onto your work surface. Unroll/unfold pastry sheet over the sugar and lightly roll it out with a pin. Sprinkle and press in the remaining 1/4 cup of granulated sugar onto the pastry. Fold it as an "envelope", with first fold longer then the other. Sprinkle and press in some leftover sugar taken from your work surface. Fold the pastry again, now with both folds being equal in size, and sprinkle/press in more sugar. Fold the pastry again as if "closing the book". Using a sharp knife, cut the pastry log into 1 cm/~ 1/2" thick slices. Transfer to the baking sheet/pan lined with parchment paper, slightly "opening" the pastry slices to resemble a heart shape. Sprinkle brown sugar on top of each heart, optional. Bake on middle rack for 15-18 minutes until desired crispness and color. Cool baked palmier cookies to room temperature before packaging, serving, or enjoying.
