Easy One-bowl Funfetti Cake Recipe

Preheat oven to 325 F. Grease four of 6" baking pans with nonstick baking spray.

1. Place the oil, butter, and sugar into the stand mixer’s bowl. Fit the mixer with a whisk attachment and whip the above ingredients together for 3-5 minutes on high speed (until the mixture becomes light and fluffy).
2. Reduce the mixer’s speed to lowest and add the eggs and the yolk. Continue mixing until fully combined.
3. While the mixer is still running on lowest speed, add the 1/3 of the flour, baking powder, and salt; once fully incorporated, add the vanilla paste and half of the milk. Increase the speed to low-medium and whip for 1 min, then decrease the speed to lowest and add the remaining flour followed by the rest of the milk.
4. Lightly fold in the baking confetti with silicone spatula just until slightly distributed. Make sure not to overmix.
5. Fill the prepared baking pans with the batter, 2/3 full.
6. Bake for 40-45 min until the inserted toothpick comes out mostly dry and clean.
7. Cool on wire rack to room temp before filling with your favorite frosting and rainbow baking confetti. Optionally, you can wrap the cooled cakes with plastic wrap and refrigerate or freeze before filling and stacking.
