These Funfetti Chocolate Cake Eggies feature a chocolate cake and buttercream mixture, molded into egg shapes, and then coated with colorful, nonpareil-speckled white chocolate. A fun and festive treat, especially for Easter.
1. Make the cakepop mixture by combining a cooled chocolate cake with chocolate buttercream, using a 2:1 ratio for your preferred consistency. Fold in pastel nonpareils.
2. Fill the egg-shaped silicone mold's cavities with the cake mixture. Freeze for 10-15 minutes.
3. Demold the cake shapes. Thoroughly wash and dry the silicone mold.
4. Divide the melted white chocolate into three bowls. Tint each bowl with yellow, blue, and pink oil-based food coloring gels respectively. Fold in additional nonpareils into each tinted chocolate.
5. Fill the cleaned mold's cavities with the tinted chocolate. Press in the cake shapes (from step 3) into the chocolate-filled cavities.
6. Freeze for another 10-15 minutes before demolding. Enjoy!
