These Grinch-themed no-spread cookies are a go-to recipe for vibrant, perfectly shaped holiday treats. The recipe includes tips for rolling without extra flour, ensuring the shapes and colors remain intact.
1. Add flour, cornstarch, salt, and powdered sugar into the bowl of stand mixer fitted with the paddle attachment. Mix on low speed just until all combined.
2. Add cubed butter while the mixer is still going on low speed; mix until the ingredients resemble cornmeal.
3. Add the egg and vanilla, mix until dough is cohesive and starts forming a ball.
4. Take out approx. 1/3 of the dough into a separate bowl and color it with red food coloring gel. Color remaining larger portion of dough with green gel (I use "red red" and "neon green" by Chefmaster).
5. Transfer the dough onto separate pieces of kitchen plastic, form flat discs, wrap and refrigerate for 30 minutes.
6. Once dough has chilled, take it out of the fridge and let seat at room temperature for 5-10 minutes.
7. Without adding any additional flour, separately roll the green and red dough in between 2 pieces of parchment paper to approximately 1/4 inch thickness.
8. Refrigerate the sheets of dough for 30 minutes.
9. Meanwhile, prepare round and small heart cookie cutters.
10. Preheat oven to 320° F.
11. Once the rolled dough has firmed up in fridge, cut the rounds and heart opening of the green dough. Cut out the hearts out of the red dough. Place red hearts into green round openings; reserve the cut out green hearts and bake them as well. Re-roll the remaining dough, repeat above steps, or wrap the remaining dough in plastic and refrigerate for later.
12. Bake on middle rack for 15-20 minutes. Enjoy!💚❤️
