Pumpkin Dulce-De-Leche Cookies

Cream the sugar, butter, and eggs until combined and smooth, about 5 minutes. Add the pumpkin puree, mix until all combined. Add the baking powder, cinnamon, nutmeg, and flour. Transfer the dough onto kitchen plastic, flatten into a disc, wrap and refrigerate for 20-30 minutes. Preheat oven to 375 F. Once the dough has firmed up, remove it from the refrigerator, pinch out 2 tbsp of dough, form golf sized balls and wrap each with a thick thread. Place on baking pan/cookie sheet lined with parchment paper 1" apart and bake for 15-18 min until bottoms of cookies turn light golden brown. Remove the baked cookies from the oven, transfer to cooling rack, and while they are still warm, scoop out the centers using an apple corer or measuring spoon. Fill with the dulce-de-leche, top with cinnamon stick. Enjoy!🎃🧡
